Preface
This book started with this wonderful dream of delighting the hearts of many
and touching the lives of people who want to be successful bakers. As bread
making has been our passion and way of life, we would like to inspire others to
partake in this wonderful blessing by sharing our recipes to them. Many have
explored to find the best bread ingredients and learned the hard way but this
book will ease the journey of even the new bakers, if they will follow the
instructions in it. The recipes will delight customers and bring businesses back
on track.
This book is our legacy to the world, for it will guide many people, now and in
the future, to know the key to successful baking, be it breads, cakes, cookies or
cupcakes. Many of the recipes use bread improvers, yeast and baking powder as
many bakers want their breads to be soft and chewy. As bakers, we have
witnessed the wonders of romancing all purpose flour and bread flour, where
one is too high in protein and the other is mixed with just the right protein so
the combination of the two, plus the yeast and baking powder, results in a super
soft and fluffy bread that rises even at a cold weather.
The secrets to baking are thus revealed in this book. Likewise, the traditional
Filipino Kakanin recipes are given a little twist to make Filipino gatherings most
delightful and impressive to other nations. It is our hope that this book could go
a million miles to feed the hungry, touch the lives of many families and improve
the living conditions of Filipino bakers around the world.
