4. Sunflower heads can be steamed and eaten like artichokes
while they’re still green plus when they go to seed they
produce a protein-rich snack.
5. Dandelions are delicious when battered and fried like
fritters. Same applies to the daylily buds.
Easy and quick to grow, perfect for a snacking garden some
of my favorite pick-and-eat vegetables. If you don’t have garden
space, plant them in pots. In just weeks, they’ll be ready for picking.
1. Radishes (very quick growing. 45 days. Try the Easter Egg
variety packs for multi-color radishes)
2. Baby Carrots (you can eat the small ones when you are
thinning them out and continue picking them on until freeze
up) Make seed tapes (directions later in this section) to
reduce the thinning and letting the carrot seeds grow to the
perfect size for baby carrots.
3. Lettuce (pick your first salad of baby greens. Try a variety
pack of lettuce seeds for added color and shapes)
More favorite snacking plants.
1. Cherry tomatoes - available in red, yellow, and orange
varieties, are bite sized which makes for eating them right off
the vine. Try a dwarf variety like Patio, Tiny Tim or Window
Box Roma. If you can’t find the dwarf varieties mentioned
here, try anything with the word compact, midget, bush, tiny
or teeny in their name.
2. Snap Peas – a faster growing variety of pea with no need for
shelling, you can eat them shell and all.
3. Mini cucumbers – my favorite snaking cuc is Cool Breeze. A
Compact plant that can easily be grown in a container.
4. Herbs (try mint, parsley, or chives) One of the best part of
gardening is being able to pick and eat your veggies right off
the plants. I’ve put in these herbs for they can be easily
