             Red wine sauce


             Serves 6 - 8 | Preparation time: 30 minutes | Cooking time: 4-5 hours


             What you’ll need:



             Ingredients



             For the beef stock

             2.5kg veal or meaty beef bones

             Olive oil, for frying
             1 onion, roughly chopped
             1 carrot, peeled and roughly chopped
             1 stick of celery, roughly chopped
             1 leek, roughly chopped
             1 garlic bulb, halved
             A few sprigs of rosemary
             1 Tbsp (15ml) tomato puree

             ½ cup (125ml) water
             500ml red wine
             2.5L water, cold


             For the red wine sauce

             100g beef offcuts
