             Slow roast pork belly with grilled pineapple and chilli salsa


             Serves 6 | Preparation time: 30 minutes | Cooking time: 2 hours 30 minutes


             What you’ll need:



             Ingredients



             For the pork belly

             2kg pork belly, skin scored

             Sea salt and freshly ground pepper

             For the pineapple and chilli salsa


             1 pineapple
             1 cucumber
             1 red pepper
             20g (5cm piece) of ginger, grated
             2 red chilies, deseeded and finely chopped

             Juice of 2 limes
             1 Tbsp (15ml) sugar
             Salt and freshly ground pepper
             50ml olive oil
             10g coriander, roughly chopped
