2. Add just enough water to cover the couscous. Too much water will make your
couscous doughy and soft.
3. Let it sit. Once you’ve added the boiling water, cover the bowl to trap in the steam and
allow it to sit for 10 or 15 minutes.
4. Remove seeds from salad ingredients. This applies especially to tomato and cucumber
seeds, as they contain a lot of moisture and can change the consistency of your
accompaniment. Cut your cucumber in half lengthways, scrape out the seeds with a small
spoon and cut the remaining cucumber into half moons.
5. Chop your chillies finely. While you may be a chilli lover, not all of your guests may
appreciate them to the same extent. And if you or your guests don’t like hot food, leave
them out altogether.
6. Include the stalks of soft herbs like mint and coriander. They add a lovely crunch to
your dish and are full of flavour too.
