             Couscous salad


             Serves: 6 | Preparation time: 30 minutes


             What you’ll need:



             Ingredients


             250g couscous
             100ml olive oil
             1-2 cups (250ml-500ml) boiling water
             1 small cucumber, cut lengthways and deseeded
             1 red onion
             1 red chilli, finely chopped

             1 red pepper, chopped
             100g dried apricots, sliced
             100g blanched almonds, toasted and roughly chopped
             20g coriander, roughly chopped
             20g mint, roughly chopped
             Juice of 2 Lemons
             Salt and freshly ground black pepper
