Franck's French food philosophies
To me, cooking is like walking, breathing or swimming – it’s a completely natural thing for
a human being to learn to do. Like with most activities, cooking well involves fully
connecting with what you’re doing. If you engage yourself intelligently with everything
that’s happening in your kitchen, things are far less likely to go wrong. And, if things don’t go
your way, it’s not the end of the world. After all, you’ll learn from your mistakes. Always
remember the golden rule though: never be afraid of food.
With cooking, your senses come into play: what you see, what you smell, what you taste,
and how textures feel in your mouth. When you taste the food you’re cooking, close your
eyes. Understand what’s happening on your tongue and hear what it’s telling your brain. Is it
salty enough? Is it sweet enough? Is it tart enough? You’ll know. Eventually, you’ll be able to
tweak the recipe and put your own creative spin on it. Trust your intuition, let go a little and
get in touch with your sense of the delicious. Great cooking is about curiosity and
playfulness as much as it is about sourcing the right ingredients and following a recipe.
Finally, a crucial ingredient of cooking is love.After all, cooking is about giving - it’s a
generous deed, and your love will come through in the taste and the attention you give to
the small details. With this in mind, always try to cook as if you’re doing it for someone you
love.
