             What you’ll need:



             Ingredients


             3 large aubergines
             Olive oil
             Salt and freshly ground pepper
             6 medium tomatoes
             1 red onion, peeled
             2 sticks celery

             2 cloves of garlic
             ½ cup (125ml) sugar
             ½ cup (125ml) red wine vinegar
             100g green olives, pitted and roughly chopped
             50g pine nuts, toasted
             3 Tbsp (45ml) baby capers, drained
