             A few notes on sambal


             Mix it up
             A sambal is a diced salad that adds a lovely freshness to any hot and spicy meal. It is usually
             comprised of chopped onions, tomato, chilli and coriander leaves but you could mix it up by
             adding all kinds of things: mango, red chilli, mustard seeds, green banana with coriander
             seed powder and coriander leaves – go wild!


             Cut your onions finely
             Onion gives your sambal terrific texture, but make sure you cut it up finely. There’s nothing
             worse than chewing on chunks of crunchy onion. It needs to balance with the overall
             flavours of the sambal, rather than stand out as the star of the show.


             The final touch
             A splash of vinegar or lemon juice adds the perfect final touch to a sambal.


             A few notes on flatbread


             Add some spice
             Add whole seeds to your flatbread for flavour and texture. Fennel seeds work well but you
             could also use Nigella or coriander seeds. If in doubt, follow this rule of thumb: the flavours
             in your accompaniments should mirror the flavours in your curry.


             Awaken the glutens by kneading
