Lightly spiced pumpkin curry with toasted almonds

What you’ll need:
Ingredients
1 Tbsp (15ml) coconut oil
1 small onion, finely sliced
1 red dried chilli (optional)
½ tsp (2.5ml) black mustard seeds
1 Tbsp (15ml) curry powder
500g pumpkin, cubed
½ cup (125ml) water
Salt and freshly ground black pepper
¼ cup (60ml) coconut cream
Handful of fresh coriander, for garnish
Handful of flaked almonds, toasted
