             Tops tips for barbecue chicken wings


             Get a perfectly balanced barbecue sauce
             Barbecue sauce has an incredible flavour profile because it balances sweet, spicy, salty and
             acidic flavours beautifully. Be sure to taste your sauce to make sure that the balance of
             flavours is just right, and tweak it if need be. Also, make sure the brown sugar has had a
             chance to dissolve before you pop the chicken and sauce into the oven.


             Season with salt
             You won’t be seasoning your chicken wings, so make sure there’s enough salt in your
             barbecue sauce to be able to flavour the entire dish. The sauce should be slightly more salty
             than you would usually have it.


             Remove the wingtips
             The wingtips end up burning – it’s not pretty. Cut them off and save them for later. These
             are great for adding flavour to a homemade chicken stock.


             Don’t overcrowd the roasting tray
             Spread the chicken wings out onto the roasting tray. See that each piece has its own spot so
             the chicken crisps up nicely.

             Have some styling fun
             Turn a carrot into long, thin ribbons using a potato peeler. It’s quick and easy, and looks
             pretty too.
