For the orange mayonnaise
1. Place the egg yolks into a food processor and add the mustard.
2. Turn on the food processor and slowly drizzle in the oil.
3. Once the cup of oil has been emulsified with the yolks, add in the orange juice.
4. Season with salt to taste.
5. Add the vinegar if you would prefer a tangier taste.
6. Spoon into a small serving dish and serve with the calamari.
For the rocket and radish salad
1. Place the rocket, sliced radishes and a pinch of salt into a large mixing bowl.
2. Add the lemon juice and toss lightly.
3. Serve alongside the calamari.
