If in doubt, use a food processor
You may want to make mayonnaise in a food processor, especially as your mayo could split
if your egg yolks and oil haven’t been beaten enough. The processor takes the grunt work
out of making mayonnaise and allows you to keep an eye on that delicate trickle of oil.
Saving a split mayonnaise
If your mayonnaise has split (which means the oil has separated from the egg), simply add it
to a new egg yolk and whisk slowly until it has combined. Then continue to add the rest of
the oil.
