1 tsp (5ml) avocado oil
Salt and freshly ground pepper
1 handful coriander, finely chopped
1 handful raw cashew nuts, toasted

Knife
Chopping board
Mixing bowl
Kitchen spoons
Small glass jar
What to do:
For the dressing
1. In a small bottle, add all the dressing ingredients and shake until the sugar has
dissolved.
For the salad
1. Toss the pork in ½ the dressing and set aside.
2. Place the remaining ingredients into a large bowl, together with the pork and dressing
and toss well to combine.
3. Add a little more dressing if needed and serve immediately.
