Quinoa salad boats with hot vinaigrette

What you’ll need:
Ingredients
For the salad
½ cup (125ml) quinoa
1 cup (250ml) chicken stock
80g peas
50g diced pancetta
Freshly ground black pepper
2 heads of cos lettuce, washed and leaves separated
3-4 fresh Bocconcini balls
For the hot vinaigrette
Leftover pancetta fat (from above)
½ red onion, finely diced
2 Tbsp (30ml) avocado oil
1 Tbsp (15ml) red wine vinegar
