             Cucumber half-moons with shredded salmon


             Serves 2 | Preparation time: 15 minutes


             What you’ll need:



             Ingredients



             For the dressing

             1 Tbsp (15ml) red wine vinegar

             3 Tbsp (45ml) avocado oil

             For the salad


             ½ English cucumber, halved, de-seeded and sliced into half moons
             ½ onion, finely sliced
             100g cooked salmon fillet with pepper and dill, shredded with a fork. Note: you can also use
             smoked salmon.
             ½ wheel Greek feta cheese

             1 tsp (5ml) black sesame seeds
             Small handful of dill
