roll them in the coating. Place them on a cold plate or in pretty holders. If you find that your
truffles are difficult to roll because the chocolate ganache is too firm, leave it at room
temperature for about 30 minutes to soften up a little.

To make shiny little chocolate jackets for your truffles, melt the chocolate on its own (in a
double boiler), then use a toothpick to pierce one truffle at a time and dip them into the
melted chocolate. You can coat your truffles in any type of chocolate but be warned – the
cocoa butter solids in white chocolate can be difficult to work with. We find that a good
quality dark chocolate gives the best results.
Storing truffles
Truffles can be kept in an airtight container in the fridge for up to a week, or in the freezer
for up to eight weeks. Packaged up, they make perfect little gifts for friends.
