             Carrot cake pops with white chocolate jackets


             Makes 20-24 cake pops | Preparation time: 10-15 minutes | Baking time: 40–45
             minutes | Icing and decorating time: 30 minutes



             What you’ll need:



             Ingredients



             For the carrot cake

             2 cups (500ml) self-raising flour
             2 tsp (10ml) baking powder
             ¾ cup (180ml) soft light brown sugar

             2/3 cup walnuts or pecan nuts, chopped
             2 ½ cups (625ml) grated carrot
             2 cups (500ml) grated apple
             2 tsp (10ml) grated fresh ginger, skin left on
             1 tsp (5ml) ground cinnamon
             ½ tsp (2.5ml) ground nutmeg
             2 free-range eggs

             2/3 cup (160ml) vegetable oil
             1 tsp (5ml) vanilla essence

             For the cake pops
