A Very Merry Festive Feast

             A delicious roasted gammon with spicy jam


             Serves 8-10 | Preparation time: 20-30 minutes | Cooking time: 3 hours


             What you’ll need:



             Ingredients



             For the gammon

             3kg gammon joint

             3 cassia sticks
             1 Tbsp (15ml) whole black peppercorns
             1 onion, cut into wedges
             1 bouquet garni (1 stalk celery, 1 bay leaf, 1 stalk rosemary and a few sprigs of thyme tied up
             with string)
             Water
             100g apricot jam, plus a little extra
             1 tsp (5ml) chili flakes


             For the sauce


             100ml white wine vinegar
