Success with Sauces

             Fresh tomato sauce


             Makes approximately 1 litre | Preparation time: 25 minutes | Cooking time: 1 hour


             What you’ll need:



             Ingredients


             1.5 kg fresh ripe tomatoes
             1 carrot, peeled and cut into 1cm cubes
             1 onion, peeled and finely chopped
             1 celery stalk, washed and cut into 1cm cubes
             4 garlic cloves, roughly chopped
             Olive oil for frying (plus 2-3 Tbsp extra to finish sauce)

             100ml water
             1 bouquet garni (2 sprigs each of basil, parsley, rosemary, thyme and celery leaves)
             Salt and freshly ground black pepper
             Sugar to taste (optional)


             Tools


             Knife
             Chopping board
             Large pot
             Slotted spoon or spider
             Mixing bowl
