             Lamb cutlets with a balsamic, rosemary and cherry tomato
             sauce


             Serves 2 | Preparation time: 10 minutes | Cooking time: 20 minutes


             What you’ll need:



             Ingredients


             6 lamb cutlets

             Salt and freshly ground black pepper
             Olive oil, for frying (plus ¼ cup extra for sauce)
             200g cherry tomatoes, halved
             1 Tbsp (15ml) chopped rosemary
             80ml balsamic vinegar


             Tools


             Heavy-based stainless steel frying pan
             Knife
             Chopping board
             Kitchen spoons
