Creamy mushroom sauce with free range chicken breasts

2 large free range chicken breasts
Salt and freshly ground black pepper
Olive oil
40g butter
1 shallot, finely chopped
150g assorted wild mushrooms, roughly chopped

3 Tbsp (45ml) brandy
200ml cream
2 sprigs fresh thyme
Micro herbs to garnish
