What to do:
For the flapjacks
1. Crack the eggs into the bowl of your stand mixer and whisk together lightly. Note: You
can also do this with a hand-held electric beater or even a whisk.
2. Add the milk, together with the vanilla essence and oil.
3. In a separate bowl, sift together the flour and baking powder then add the salt and
sugar.
4. Slowly add the dry ingredients to the wet ingredients and whisk until well combined.
5. The mixture should be a relatively thick, pouring consistency. Note: You can add a little
more flour if the mixture is too thin, or a little milk if mixture is too thick.
6. Set aside to rest for 10 minutes while you prepare the toppings.
7. When you’re ready to cook the flapjacks, add a good knob of butter to a medium hot
pan, allowing it to melt.
8. When the butter starts to foam, place tablespoons of the mixture into the pan and
cook for about 2 minutes or until bubbles start to appear on the surface.
9. Turn the flapjacks over and cook for another 30 seconds or until cooked through.
10. Repeat until the mixture is finished.
For the bacon and banana toppings
1. Preheat the oven to 200°C.
