             Potato pancakes with smoked salmon, crème fraîche and

             chives

             What you’ll need:




             Ingredients



             For the potato pancakes

             500g mashed potatoes, warm
             2 Tbsp (30ml) flour
             3 Tbsp (45ml) crème fraîche

             2 large eggs
             1 large egg yolk
             Salt and white pepper
             Vegetable oil, for frying


             For the smoked salmon, crème fraîche and chives topping

             400g smoked salmon
             ½ cup (125ml) crème fraîche
             20g chives, chopped

             Lemon wedges, for serving
