             What to do:



             For the potato pancakes

               1.  Mix all the ingredients together while the mashed potato is still warm.

               2.  Heat a little oil in a frying pan.
               3.  Drop tablespoons of the mixture into the pan and fry for about a minute on each side
                   or until cooked through and golden brown.


             To assemble

               1.  Allow the pancakes to cool slightly then top with a little crème fraîche and smoked
                   salmon.
               2.  Garnish with chopped chives and serve immediately with wedges of lemon.
