             Grilled spatchcocked chicken with a charred tomato sauce


             Serves 4 | Preparation time: 45 minutes | Cooking time: 1 hour


             What you’ll need:



             Ingredients



             For the chicken

             1 whole free-range chicken

             20ml olive oil
             2 cloves of garlic, roughly chopped
             1 Tbsp (15ml) black pepper, ground
             10g rosemary, roughly chopped
             Salt


             For the charred tomato sauce

             6 whole tomatoes

             Salt and freshly ground pepper
             2 Tbsp (30ml) sugar
             Olive oil
             ½ onion, finely chopped
             2 cloves of garlic, finely chopped
             1 chilli, deseeded and finely chopped
