Set for the order - DINE IN


         Breakfast:
         Cutlery is to be delivered with the food order.
         Lunch:

         As soon as a food order is processed through the POS, the food runner will
         immediately take Marchetti underlay paper and cutlery to the table. Refer to Setting
         the Table Standard & Procedure.
         Aperitivo:

         Immediately after the order is taken, share plates, cutlery and underlay paper is to be
         set on the table.






         Remove menus

         After a guest has ordered, it is essential to remove the menus from the table. This
         reduces clutter, keeps the table tidy and preserves the cleanliness of the menu. You
         may say something like: “Let me take this for you to give you a little more room.”






         Deliver food - DINE IN

         All food and drinks will be delivered to the table.

         The chef or barista will always ring the bell when food or drinks are ready to be
         collected. Food and beverages should never be kept waiting.

         Never take anything from the pass unless you are 100% sure you know exactly what it
         is, and where it is going.
         If you are taking the entire order to the table in one trip, spike the docket. If you are
         taking only part of the order, cross off the items you are taking and leave the docket
         on the pass. Once the entire order is taken, you must spike the docket.
         Announce the dish as you place it in on the table. Never use the shortened version of
         the name. For example: say, “Gorgonzola and Fig Bruschetta” not “Bruschetta”.

         When a table has received their entire order, confirm with them that they have
         received everything they ordered. If they are not waiting on anymore items, remove
         the table number and return it to the counter area.






         Deliver food - TAKE AWAY

         Call the guest’s name when their order is ready for collection. Using the guest’s name
         makes a connection - even if you get it wrong! Have a go at pronouncing it and if you
         get it wrong, clarify it with them so you know for next time.
