JAY’S                                  Chilled Cantaloupe







                                                                   & Basil Soup



                                                       -6 cups Cantaloupe

     Chef Jay Prisco                                   -1 ½ cups orange juice





                                                       -1 cup white grapes



                                                       -½ cup white grape juice (juice and grapes


                                                       can be interchangeable to just use one item


                                                       and a little more quantity)


                                                       -¼ cup lemon juice



                                                       -¼ cup lime juice



                                                       -Honey to taste



                                                       -Basil to taste


                                                       -Salt to taste



                                                       -Pinch of Cinnamon



                                                       Combine all ingredients in blender,, Adjust


                                                       seasoning.



                                                       Refrigerate overnight and serve.


                                                       For garnish:



                                                       Small dice 1 cup cantaloupe.
