                     Air-dried beef selected from Black Angus top rounds grown on a small
                     farm in Pennsylvania.  Bresaola is a specialty of Valtellina, Lombardy.
                     Typically this would be sliced thin and served with shaved Parmigiano,
                     lemon juice and a very nice olive oil.
