                                                                   A prosciutto is covered in ground black
                                                                   pepper and then the whole leg is air-
                                                                   smoked, just like the Northern Italian and
                                                                   Austrians are used to.  This earthy and
                                                                   smoky product lends itself to fresh regional
                                                                   fruit such as figs.
