Cold Potato Salad With





                        Mustard Vinaigrette



















































        Ingredients                                             Instructions




        1 Pound - Baby Red Potatoes                             Wash potatoes then place in a 6-quart stockpot and cover with
        1 Tablespoon - Ambrosia® Kosher Salt                    cold water. Add salt. Warm over high heat until the water boils then
                                                                reduce to a gentle simmer. Cook until potatoes are tender, about
        ¼ Cup - Ambrosia® Extra Virgin Olive Oil                20 minutes.
        2 Teaspoons - Ambrosia® Lemon Juice                     Drain potatoes and place on a sheet tray in the refrigerator until
        1 Tablespoon - Esprit de Paris® Grain Dijon Mustard     cool. Slice to bite size (½ - ¼ depending on the size of the potato).
        2 Each - Large Eggs Hard Boiled Chopped                 Combine the remaining ingredients in a medium mixing bowl until
        ¼ Cup - Celery Minced                                   thoroughly mixed to make the vinaigrete.
        ¼ Cup - Ambrosia® Cornichons Chopped                    Fold in the cold, sliced potatoes gently, ensuring they are fully
        ¼ Cup - Red Onion Minced                                coated in the vinaigrette mix.
        1 Tablespoon - Ambrosia® Non Pareille Capers            Serve cold.
        1 ½ Teaspoons - Fresh Dill Chopped
        1 Teaspoon - Ambrosia® Kosher Salt
