Mediterranean Salad
Ingredients Instructions
SALAD In an extra-large bowl, place the romaine and arugula. In a small
bowl or measuring cup, make the dressing: Whisk together the

olive oil, vinegar, mustard, garlic, salt, and pepper until smoothly
4 Cups - Baby Arugula combined (or put all of the dressing ingredients in a mason jar,
½ Cup - Salami, diced seal, and shake to combine). Pour half of the dressing over the
½ Cup - Prosciutto, diced salad and toss to coat. The leaves should be lightly moistened.
¾ Cup - Ambrosia® Marinated Quartered Artichoke Hearts, drained Arrange the salami, prosciutto, artichokes, olives, red peppers,
½ Cup - Ambrosia® Greek Country Mix Olives and tomatoes on top of the greens. Drizzle with a bit more
dressing to moisten. Sprinkle with feta and parsley.
1 ½ Cups - Ambrosia® Fire Roasted Red Pepper Strips, drained, Enjoy!

DRESSING
¼ Cup - Ambrosia® Extra Virgin Olive Oil
2 Tablespoon - Ambrosia® Balsamic Vinegar
1 Teaspoon - Esprit de Paris® Smooth Dijon Mustard
1 Teaspoon - Fresh Garlic, minced
½ Teaspoon - Ambrosia® Kosher Salt
¼ Teaspoon - Black Pepper
