Running a Great Shift Learner Guide
Every Face, Every Table, Every Time You Walk the Floor (EFETET)
Lesson 1 00:15
Overview
In many restaurants across the country, “management training” consists of handing the new manager a set of keys and a
manager card for the POS system. It’s crazy! These new managers don’t receive any real direction for running a
successful shift, so it isn’t surprising if they stumble through the learning curve.
Many leaders believe that time is the key ingredient in learning how to manage a restaurant. Well, that just isn’t true.
How often have you heard a veteran GM say, “don’t worry, one day you’ll do this just as well as I do.”
Rather than time, proper training is the key! Every Face, Every Table, Every Time You Walk the Floor (EFETET) is our
system for teaching new leaders how to run a shift as well as a GM within 2 weeks!
EFETET Defined
Every Face, Every Table, Every Time You Walk the Floor (EFETET) is a system that allows leaders to eliminate poor
guest experiences. By watching for a handful of visual cues, leaders can catch guest dissatisfaction and correct the
situation before it escalates.
It’s easiest to define EFETET by breaking it into 3 components, and speaking to each individually:
Every face
Every table
Every time you walk the floor
Every Face
