Puri




         Roti style bread


         Ingredients:
         500g plain flour
         250ml water
         1 tablespoon oil
         500ml extra oil for cooking the puri


         Method:
         1. Mix the flour and the water together in a bowl (with a wooden spoon or your
             hands) until it becomes like a sticky dough.
         2. Form the dough into a ball.
         3. Take a small handful of dough, and roll out on a floured surface (until it is the
             size of a large outstretched hand)
         4. Heat the oil in a fry pan and place uncooked roti in the hot oil.  Cook for only
             1 minute or until it becomes golden brown and light and puffy.


         *To make chapati (pictured on page 38) the process is the same except step 4 -
         instead heat a dry fry pan over medium heat and place each circle of dough on
         the fry pan.  Press down on the dough surface with a frying spatula to flatten and
         cook for 2-3 minutes each side, and serve warm!
