Strudel Topped Blueberry Muffins



           1½ cups self rasing flour         Topping                               essence in a jug.
           ½ cup sugar                       ½ cup sugar                        3.  Fold liquid into bowl and

           ½ tsp  salt                       4 tbsp butter
                                                                                4.  To make the topping,

                                                                                   combine the flour,  sugar

                                                                                   and butter to crumbs.
           1 egg                             1.  Sieve all dry ingredients
                                                                                5.  Divide over the muffins
           ½ cup buttermilk                      into bowl
                                                                                6.  Bake at 200 C for 20 mins
           ½ cup cooking oil                 2.  Beat together egg,
                                                 buttermilk, oil and vanilla
           1½ tsp vanilla essence


              Anything goes why not replace the blueberries
              with:
              Raspberries and white chocolate chips
              Chocolate chips
              Choc chips and orange zest
              Grated apple and fudge pieces
              or Lemon zest
