When a doughnut and a muffin get together!

You really have got to try these...

Duffins

2 eggs Method
185mls milk 1. Combine eggs, oil,milk and vanilla

125mls cooking oil 2. Add flour and sugar and mix together to smooth dough
Vanilla essence 3. Fill 1/3 of mixture into muffin cases

300g Self raising flour 4. Add 1/2 teaspoon of jam, nutella, lemon curd or whatever you
fancy, into the centre
150g Castor sugar
5. Cover filling until case is 2/3 full
6. Bake at 190°C for 25 minutes

7. Allow to cool slighty. Brush the tops with melted butter and dip
in sugar

8. Makes 10
