Blackened Catfish with Confetti Coleslaw continued

                       4.  Place the fillets on the baking pan. Broil the fish 5 inches from
                         heat for 6 to 8 minutes, or until the fish flakes easily when tested
                         with a fork.

                       To make the coleslaw:
                       1.  In a large bowl, whisk together the mayonnaise, vinegar, honey,
                         mustard, salt, and pepper.
                       2.  Add the coleslaw mix, bell pepper, and parsley. Toss well to coat.
                         Cover and chill until ready to serve.
                       3.  Serve the catfish and coleslaw with lemon wedges.
                       Serves 4. Prep time: 15 minutes. Cooking time: 10 minutes. Total time: 25 minutes.
