Honey-Tamari Salmon
Gluten-Free
with Rice and Snow Peas Dairy-Free
Honey and tamari give the salmon a delicious sweet-salty teriyaki
flavor. You can marinate the salmon up to 2 hours, if you’d like. It
only improves the flavor. Steamed rice and steamed snow peas
round out this Asian meal.
3 tablespoons tamari or 1 teaspoon grated fresh ginger
coconut aminos 1½ pounds center-cut
2 tablespoons honey salmon fillets
1½ tablespoons brown 1 cup uncooked brown rice
rice vinegar 1½ pounds snow peas, trimmed
1 garlic clove, minced
1. In a medium bowl, whisk together the tamari, honey, vinegar,
garlic, and ginger. Place the salmon in a large zip-top plastic
freezer bag. Pour 3 tablespoons of the marinade over the salmon.
Marinate the salmon in the refrigerator for 15 minutes.
2. Prepare the rice according to the package directions, then keep
the rice warm.
3. Preheat the broiler.
4. Line a rimmed baking sheet with aluminum foil. Place the
salmon on the pan. Broil 5 inches from the heat for 8 to 10 minutes
or until done.
5. Meanwhile, place the snow peas in a steamer basket in a sauce-
pan over simmering water. Cover and steam for 3 minutes or
until crisp-tender.
6. Place the salmon and rice on serving plates and drizzle with the
reserved marinade. Serve with the snow peas.
Serves 4. Prep time: 10 minutes. Cooking time: 40 minutes.
