Lemon-Lime Granita

             This tart and tangy treat is a refreshing way to finish a meal. It’s
             easy to make ahead and keep in the freezer for times when you
             need something sweet. Try experimenting with other fresh juices
             for a new twist to this elegant, traditional Italian dessert.

             Cooking Tip: Freezing this dessert in a metal baking dish helps it
             freeze evenly and quickly.

             ¼ cup fresh lemon juice       ¼ cup liquid stevia
             ¼ cup fresh lime juice        1 teaspoon fresh lemon zest
             1 cup water                   1 teaspoon fresh lemon rind
             1.  Combine the lemon juice, lime juice, water, stevia, lemon zest,
               and lime rind in a shallow metal baking dish. Stir well, then
               place the dish in the freezer.
             2.  Stir the mixture with a fork every 10 to 15 minutes until it
               becomes slushy, about 45 minutes.
             3.  Once the granita is slushy, leave it in the freezer and scrape it
               around every 10 minutes until it has a crystalized, icy texture.
             4.  Spoon the granita into dessert cups and serve immediately.
             Serves 4. Prep time: 1 hour.
