Apple Crumble
Vegetarian
Reminiscent of the apple pie grandma used to make, this crumble
is a comforting classic. And it’s full of healthy benefits. Apples are
a great source of fiber, vitamin C, and antioxidants, and one a day
surely enhances your health.
Cooking Tip: Don’t let the butter get too soft before making the
crumble topping. It should still be firm to help give the topping
structure during baking.
Coconut oil, for greasing ¼ teaspoon ground nutmeg
4 apples, peeled and 7 tablespoons 100% whole-
thinly sliced wheat pastry flour
3 tablespoons lemon juice ½ cup uncooked old-fashioned
½ teaspoon pure rolled oats
vanilla extract ¼ cup chopped almonds
4 tablespoons evaporated 2 tablespoons cold butter,
cane juice cut into pieces
1 teaspoon ground cinnamon
1. Preheat the oven to 375°F.
2. Coat an 8-inch-square baking pan with coconut oil.
3. In a medium bowl, toss together the apples, lemon juice, vanilla,
1 tablespoon of evaporated cane juice, ⁄ 2 teaspoon of cinnamon,

nutmeg, and 1 tablespoon of flour. Pour the mixture into the
prepared baking pan.
4. In a separate medium bowl, stir together the remaining 6 table-
spoons of flour, oats, the remaining ⁄ 2 teaspoon of cinnamon, the

remaining 3 tablespoons of cane juice, almonds, and butter; mix
with a fork or fingers until crumbly. Spoon the crumble mixture
evenly over the apples.
5. Bake for 20 to 25 minutes or until the topping is golden and the
apples are juicy and fork-tender. Serve warm.
Serves 6. Prep time: 10 minutes. Cooking time: 20 minutes. Total time: 30 minutes.
