Apple-Raisin Rice Pudding

             Rice pudding is the ultimate kid-friendly treat. Its creamy tex-
             ture and vanilla flavoring can be matched by no other dessert. It’s
             important to use short-grain rice in this recipe to attain the perfect
             smoothness to the pudding. Stove top-simmered rice pudding,
             like this recipe, involves a lot of stirring but that makes it creamy
             and memorable.
             Make-Ahead Tip: Make this rice pudding ahead of time and keep
             it in the refrigerator for an easy dessert during the week. You can
             serve it warm or chilled.

             3 cups milk                   ¼ cup dried apples
             ½ cup short-grain brown rice  Pinch salt
             ¼ cup pure maple syrup        1 teaspoon pure vanilla extract
             ¼ cup raisins                 1 teaspoon ground cinnamon
             1.  In a medium saucepan, combine the milk, rice, maple syrup,
               raisins, apples, and salt. Bring to a boil, stirring frequently to
               prevent scorching.
             2.  Reduce the heat to low and simmer, uncovered, for 20 to
               25 minutes, stirring frequently until the rice is tender and the
               mixture is creamy.
             3.  Stir in the vanilla and cinnamon. Serve warm or cover and
               refrigerate up to 1 week.

             Serves 4. Prep time: 30 minutes. Cooking time: 40 minutes.
             Total time: 1 hour, 10 minutes.
