Fudgy Chocolate Chunk–


                                   Pecan Brownies
           Vegetarian


                       If you are a chocoholic, this is the dessert for you. Chewy, rich
                       brownies are studded with chunks of dark chocolate and toasty
                       pecans. It’s the perfect treat to take with you on the go or to enjoy at
                       the end of a long day.
                       Double It: These brownies are perfect to bake and take to a potluck
                       or to feed a crowd. Double the ingredients and bake in a 13-by-9-inch
                       baking pan. Add 2 to 5 minutes to the baking time. Or if the brownies
                       are a dessert on your meal plan, freeze them and defrost for 3 to
                       4 hours in plastic wrap at room temperature before eating.

                       Coconut oil, for greasing     ½ cup 100% whole-wheat
                       ½ cup butter, melted             pastry flour
                       1 cup coconut sugar           ¼ teaspoon baking powder
                       1 teaspoon pure vanilla extract  ¼ teaspoon salt
                       2 eggs                        ½ cup chopped 70%
                       ¹⁄  cup unsweetened              bittersweet chocolate
                        ³
                          cocoa powder               ½ cup chopped
                                                        pecans, toasted

                       1.  Preheat the oven to 350°F.
                       2.  Coat a 9-inch-square baking pan with coconut oil.
                       3.  In a medium bowl, stir together the butter, sugar, vanilla extract,
                         and eggs. In a separate medium bowl, whisk together the cocoa
                         powder, pastry flour, baking powder, salt, chocolate, and pecans.
                         Add the dry mixture to the butter mixture, stirring just until
                         combined. (The batter will be thick.)
                       4.  Spread the batter into the prepared pan. Bake for 18 to 20 min-
                         utes or until set. Serve warm or at room temperature.
                       Serves 12. Prep time: 10 minutes. Cooking time: 20 minutes. Total time: 30 minutes.
