Streusel-Topped Blueberry Mufns continued


                       To make the mufns:
                       1.  Preheat the oven to 325°F.
                       2.  Line 12 cups of a mufn tin with paper liners.
                       3.  In a large bowl, whisk together the flour, baking soda, and salt;
                         add the blueberries, tossing gently to coat.
                       4.  In a separate bowl, whisk together the applesauce, cane juice,
                         vanilla extract, egg, and butter. Add the applesauce mixture to
                         the flour mixture and stir until just moistened.
                       5.  Spoon the mixture into the paper liners. Crumble the topping
                         evenly over the mufns.
                       6.  Bake for 23 to 25 minutes or until the topping is lightly browned
                         and a toothpick inserted in the center comes out clean. Remove
                         the mufns from the oven and let them cool in the pan for
                         10 minutes.
                       7.  Serve warm or remove to a cooling rack and cool completely.

                       Makes 12 mufns. Prep time: 15 minutes. Cooking time: 25 minutes.
                       Total time: 40 minutes (plus 10 minutes to cool).
