Yogurt-Berry Parfait
Vegetarian
Between layers of naturally sweet fruit, sprinkle in some homemade
granola for a healthy crunch. The recipe calls for spicy-sweet
granola, but any clean granola will do. This parfait travels easily and
makes for the perfect at-work breakfast or afternoon snack.
Ingredient Variations: You can use any leftover fruit you may
have in your refrigerator in place of strawberries and blueberries.
And if time is tight, you can always substitute store-bought granola
for homemade. Just be sure to read the label to confirm that there’s
no added refined sugar.
1 cup plain Greek yogurt ½ cup sliced strawberries
1 tablespoon honey ½ cup blueberries
8 tablespoons Spiced Pecan-
Almond Granola with Dried
Fruit (page 138)
1. In a medium bowl, stir together the yogurt and honey.
2. Spoon ⁄ 4 cup of the yogurt mixture into each of the two

serving bowls.
3. On top of the yogurt, sprinkle 2 tablespoons of the granola and
top with ⁄ 4 cup of the strawberries. Repeat the yogurt layer and

top with ⁄ 4 cup of the blueberries.

4. Serve right away, or refrigerate for up to 1 hour.
