Slow Cooker Overnight
Oatmeal with Fresh Vegan
Cherries and Maple Syrup
Steel-cut oats are a little bit more crunchy than traditional rolled
oats. They’re also slightly lower in calories and pack a higher
punch of fiber. The tart-sweet cherries and sweet maple syrup
complete this delicious, healthy breakfast dish.
Cooking Tip: Don’t have a slow cooker? This oatmeal can be made
on the stove top, too. Follow the instructions on the package for
cooking times.
Coconut oil, for greasing ¼ teaspoon salt
1 (13.5-ounce) can coconut milk 1 teaspoon pure vanilla extract
3¼ cups water ½ teaspoon ground cinnamon
1 cup steel-cut oats 2 cups fresh cherries, pitted
½ cup pure maple syrup and halved
1. Coat a 3- to 4-quart slow cooker with coconut oil. Combine the
coconut milk, water, oats, maple syrup, and salt in the slow cooker.
Cover and cook on low for 7 hours or until the oats are tender and
the mixture is creamy. Stir in the vanilla and cinnamon.
2. Divide the oatmeal among serving bowls, top each bowl with the
fresh cherries, and serve.
Serves 4. Prep time: 10 minutes. Cooking time: 7 hours.
