In Key West, the most popular citrus fruit is the key lime. This tart, little
lime is used in all sorts of cooking. According to chef José, the juice of
the key lime can be used many different ways. A small amount—or equal
amounts of lemon and regular lime—adds new flavors to ordinary dishes.
When I was growing up, tuna was a staple in our household. It was
inexpensive, and it could be used in so many different ways. At the time, I
never considered it “survival” food, but it was—and it still is. Today, I always
have a few cans of tuna on hand, just in case.
