You will visit a winery where you will be
welcomed and shown around the vineyard and the
cellar. There you will learn about the history of
the area and about the production process of the
local wines, followed by a tasting of the wines of
this emerging region. You will also meet a rural
salt producer who owns a privileged piece of land
with its own saltwater spring. This natural spring
has been the local source of salt since Roman
times and the family still uses the Roman
infrastructure to produce salt by hand. You will also visit a small, local cheese producer to
sample the famous payoyo cheese from southwest Spain, and to an olive oil mill which still uses
traditional methods. You’ll be treated to tastings while you learn what makes the oils from this
small specific industry so unique. For lunch, visit a selected local restaurant in the heart of a
natural park (cost of lunch not included in your program). Return to your accommodations in
Seville at the end of the day at the conclusion of touring. Note that we have specified a separate
               driver for the day.

Day 9: Cordoba. Today’s agenda includes an excursion to Cordoba, third jewel of ancient
Andalusia and former capital of the Moorish province of El Andalus. First-class rail service 45
min from Sevilla to Cordoba via the high-speed AVE (a
great way to travel!) is included. Imma, our Cordoba
guide, or one of her colleagues will meet you in the city
center (which you will reach by taxi) to commence your
private tour. The focus will be the tenth-century Great
Mosque, or Mezquita, the emblem of Cordoba’s
position as one of Europe’s greatest capitals of that era.
You will learn of the history and architectural
significance of the structure and how the Christians
incorporated their cathedral within the mosque in the
sixteenth century. In addition to the Mosque, you will visit the Jewish quarter where you can
enjoy lunch on your own at one of Cordoba’s traditional restaurants (cost of lunch not included).
Return to Seville at the end of the day by the AVE.
