                                                                   Flavigny-sur-Ozerain, a well-preserved and
                                                                   quite small medieval village perhaps best
                                                                   known as the location for the film
                                                                   Chocolat, but also for its beautiful Flavigny
                                                                   Abbey, botanical garden, and one-of-a-kind
                                                                   production of Anise of Flavigny using a
                                                                   recipe developed by monks centuries ago.
                                                                   This medieval city is built on a rocky spur
                                                                   surrounded by three streams. Flavigny sits
                                                                   high on a rock and is considered one of the
                                                                   most beautiful villages in France. The
               origin of Flavigny-sur-Ozerain goes back to the eighth century. It was constructed around a
               Benedictine Abbey founded by a certain Widerard in the year 719. Part of the abbey is a factory
               used to produce Anise pastilles that are available for purchase.

               Continue 1 hr 30 min to your accommodations. En route, you could also take a peek at the
               attractive village of Avallon, time permitting.

               Day 4:  Exploring Chablis. Today, you’ll meet Brendan, one of our favorite local wine
               driver/guides, for a visit to the
               small wine village of Chablis,
               which will be your introduction
               to the region of Burgundy.
               Located 40 min from your
               accommodations, Chablis is a
               lovely appellation, and the
               winemaking tradition dates to the
               year 854 when monks first
               settled here. Your first stop
               might be up in the Grand Cru
               vineyards of Chablis for a brief viticultural discussion of the region, the northernmost region
               within Bourgogne and home to crisp, flinty white wines thanks to the area climate, which is
               cooler than the rest of Burgundy. The climate as well as the winemaking tradition, which
               excludes the use of oak barrels, yields a fresher, lighter and drier white wine than you will find in
               other parts of Burgundy. You’ll have a tasting at a local producer such as William Fevre and then
               we suggest lunch at the Bistro des Grand Crus in the village of Chablis. You might visit another
               of Brendan’s favorite producers in the early afternoon.
