Gesine Confectionary Cherry Pie

                                                                 . It’s a simple
                cherry pie, but when cherries are in season and abundant, there’s
                nothing  simple  about  the  flavor.  Just  make  sure  you  pit  all  of  the
                cherries. I don’t think I need say more.



                 sugar                         1 cup                                  200 g

                 ground cloves                 pinch

                 salt                          pinch
                 Clearjel (see Note, page 57) 3 tablespoons                           30 g

                 fresh pitted cherries         7 cups                                 1.1 kg

                 juice and zest of 1 lemon
                 All-Butter Easy Pie Dough
                 (page 19)                     1 batch
                 Crust Dust (see Note, page    1 to 2 tablespoons                     10 to 20 g
                 24) for the shell
                 unsalted butter, cubed into   3 tablespoons                          42 g
                 tiny pieces

                 egg wash (1 egg whisked with 2 tablespoons/30 ml water)
                 sanding sugar or turbinado    2 tablespoons                          25 g
                 sugar, for sprinkling

                . In a mixing bowl, whisk together the sugar, cloves, salt, and
                  Clearjel. In a large bowl, toss the cherries with the lemon zest and
                  juice until they are evenly coated. Sprinkle the sugar mixture over
                  the cherries and again toss until evenly coated.

                . Divide the dough into 2 pieces, one slightly larger than the other.
                  Roll the larger piece into a rough 11-inch (28-cm) round and line a
                  9-inch (23-cm) pie plate with it. Roll the second piece into a 9½- to
                  10-inch (24- to 25-cm) round. Cut out decorative shapes or lattice
