                . With the mixer on low, add the wet ingredients to the dry ones, and
                  when they are just combined, slowly add the bits of butter.

                . Mix the dough until it starts to pull from the sides of the bowl and is
                  very shiny. If the dough is still quite sticky, slowly add more flour
                  from the remaining 1 cup (140 g). The mixing process can take

                  quite a while, up to 15 minutes. Be patient.
